Its actually very easy, one quick command in the Start Up Applications menu in Ubuntu MATE (tested on 19.04 with X2Go).
Ask Ubuntu suggests creating a dummy xorg config file (with some bad results in the comments) but we've done considerable testing with screens, inputs and touch controls before, xrandr to the rescue! Its ironically the No. 2 suggestion.
